Particularly in California. I desperately want to attend culinary school, but I'm afraid the only way I can avoid working with meat is to work in the baking program exclusively, which I really don't want.

A: In general, there is no culinary school which will inform you upfront of such exclusion from their curriculum. However, you should get in touch with them if you have any restriction due to religion or health issues. You can always customize your program based on your priorities.

A: The Culinary Institute of America (known as the CIA) in either St. Helena, CA or Hyde Park, NY. Also, Johnson & Wales in New England. Those are the top ones in the US.

A: Culinary Instsitute of America (CIA) is a prestigious school in Hyde Park, NY and it's very hard to get in.....even seasoned chefs go there to attend classes. I toured there once and its a beautiful school. Also, in Chicago there is a school called Washburne Culinary Institute and the French Pastry School.....I hear they are great schools.
